Mozzarella and Tomato Salad

Another recipe for National Vegetarian Week today, and despite the change in weather, I'm going a little European and dreaming of better weather today as I feature a Mozzarella and Tomato Salad. I decided to make this as I found some fantastic Beef Tomatoes at Costco this week. I also bought a new Basil plant, which was the perfect oppportunity to try and grow more herbs. Here is the recipe - enjoy!!

250g Buffalo Mozzarella
2 large Beef Tomatoes
Basil Leaves
Olive Oil
Salt & Pepper

  1. Slice the Tomatoes and Mozzarella and arrange in a bowl, layering one over the other
  2. Sprinkle Basil Leaves over the top of the dish, and then drizzle in Olive Oil and season with salt and pepper.
  3. Serve immediately, or cover and place in the fridge.
