For Meat Free Monday, this was my meal:
- Mixed Salad of Watercress, Rocket and Spinach
- Chopped Red Pepper
- Chopped Cucumber
- Sainsburys Green Risotto Vegetable Kiev
- Shredded Mozzarella
- Balsamic Glaze to garnish
This meal averages out at about 500 calories.
