What I've been eating this week!

With this hot weather, the last thing I have felt like doing lately is eating a large meal. I seem to have been grazing permanently! One of the things I have been enjoying quite a lot lately is Mozzarella and Tomato Salad. Oh so simple to make, this has been one of my summer staples during the hot weather as it is quick and easy to make, and so light and refreshing. I have been pairing it with pitta bread and lots of fresh water!!


Something else I have been enjoying lately are Seabrook Crisps. We were sent some of the Lattice Range to sample, which are vegetarian-friendly and gluten-free. Made in Yorkshire the new Lattice range;s criss-crossed surface captures more flavour. We were sent a packet of Sweet Chilli and a packet of Natural Flavours. We all really enjoyed the Natural Flavour Lattice Crisps, which had a great flavour to them. The Sweet Chilli was reserved more for the grown-ups as it had quite a tangy flavour, but was very well received by all who tried them. We have been enjoying these with lashings of sour cream and chive dip!


In addition there just seems to have been lots of grazing going on from all of us. No one seems to have been up to eating a full plate of food, but with the holidays uponn us, I find that I am just constantly putting out foods for people to nibble on - cheese and crackers, quiches, tarts, and lots of salad. What have you been eating in the hot weather? I need some inspiration!!
